EP 169: Sugar, Sunshine, and Second Chances with Emily Scanlan

Here’s a special recipe from Emily herself! They look sooo yummy.

Best Ever Sugar Cookies

1 c butter (room temp)
1 c sugar
2 eggs (room temp)
2 teaspoon vanilla extract
1 c heavy whipping cream (room temp)
4 teaspoon baking powder
4 c flour

Whip butter on medium speed of a stand up mixer, about 2 minutes. Add sugar, eggs and vanilla. Mix until combined. Slowly add in heavy whipping cream. Mix until well combined. Then add baking powder and the flour one cup at a time, mixing after adding each cup. If dough is still sticky, add a little more flour, until when you touch the dough it doesn’t stick to your finger.
Remove dough from mixing bowl and wrap in plastic wrap. Refrigerate for at least 8 hours. Roll dough out about 1/4″ on a floured surface.
Bake cookies at 350° for 12-14 min. Cool completely and then frost.

Buttercream Frosting
1 c butter (room temp)
2 teaspoon vanilla
6-8 c powdered sugar
1/2 c milk

Whip butter in mixer for about 2 minutes. Add vanilla and half of the powdered sugar. Add only about a quarter of the 1/2 c milk. Mix well. Continue adding sugar and milk alternately until desired thickness and/or taste.
